Our Pigs

Our heritage breed pigs are a born on Baugher farm in Stanardsville, Virginia and raised from the age of 8 weeks on our wonderful mountain. Once trained to respect our mobile electric fences our piggos are ready to do some work. While munching on our compost, whey (from our goat cheese creations), and non-GMO-soy-free feed from Sunrise farms, our pigs are rotated around our pastures and free to root on all the forest floor has to offer. They are then moved into our orchard and do a wonderful job cleaning up the fallen apples from fall harvest. Their journey ends at Blue Ridge Meats,a fully FDA certified processing center, and we “bring home the bacon.”

Juniper Fennel Dry Rub

We use this on our pork chops. Rub the rub on the chops and let sit for a minimum of 2 hours or overnight in the fridge. Remove the rubbed chops from the fridge about 30 minutes before grilling. Mix contains: crushed juniper & fennel, garlic, fresh ground black pepper, kosher salt. Enough for rubbing two chops.
